5 Ways to Use Beets in Your Cocktails

People who love earthy drinks often get the short end of the cocktail stick. How many times can you drink a Bullshot or the same Bloody Mary before you’re ready to just give up? Fortunately we have an answer for you: Beets. If you’ve just been roasting them and serving them with goat cheese since 2006, it’s time to reexamine the root vegetable. Here are our favorite beet cocktail recipes, from a deep red Margarita to a totally reimagined Bloody Mary.

Playing off the natural sweetness of beets by making them into a syrup, this riff on a Gin and Tonic also uses grapefruit cordial and lemon juice to accentuate gin’s inherent citrusy flavors. The drink’s creator, Ardi Dulaku, recommends Aviation Gin as a great match for all the other ingredients here.

Lots of people like to riff on Margaritas using different fruits like strawberry, mango or pineapple. But Josh Goldman took the drink in a more vegetal direction with beet-and-citrus-spiked agave. And to play up the earthy flavors of the beets, he also uses an añejo tequila. This cocktail has a lot going on.

This version, adapted from Brian Bartels tome on the subject, adds beet juice for a richer color and flavor, and also swaps out vodka for lower proof, nutty amontillado sherry.
