Lala Galaini created this rich winter warmer while working at the late, great NYC haunt Seamstress a few years ago. Her original version featured a dash of Patrón XO Cafe Incendio, which imparted an extra jolt of spice to the drink. That variant is no longer on the market, so we made it with Patrón XO Cafe, and couldn’t have been happier with the creamy, spicy, slightly decadent and completely delicious result.
One programming note: Galangal syrup is a simple syrup made with galangal root, a rhizome that looks exactly like ginger but has a sharper, more citrusy flavor profile. It’s widely available at Asian markets, but if you can’t find it, you can substitute ginger.
Here’s the complete recipe
- 1 oz blanco tequila
- 2.25 tsp Patrón XO
- 1.5 oz milk
- 1.5 oz coconut milk
- .25 oz galangal syrup
- ⅛ tsp chai tea
- Marshmallow, for garnish
- Chocolate-dipped spoon
- Combine blanco tequila, Patrón XO Cafe, milk, coconut milk, galangal syrup and chai tea in a saucepan and whisk together. Heat gently till steaming.
- Strain the cocoa into a mug and garnish with a large toasted marshmallow.
- Serve with a chocolate-dipped spoon.
