Summertime brings with it long days and warm nights, extending happy hour into a daylong affair. But with the joy of a 2 p.m. cocktail often comes the dreaded 6 p.m. hangover, which is always unpleasant, no matter how much fun you had at the pool party or rooftop soirée. For a tasty fix, try a cocktail made with that classic summer fruit that makes everything more refreshing: watermelon.

The crunchy, electric pink melon is packed with water, so it actually helps you hydrate, warding away that early evening slump. Plus, one serving has double the potassium of a banana and is loaded with vitamins A and C to keep your immune system in check—so you’ll feel good all summer long. We love adding a bit of tongue-numbing spice to tequila drinks, and this summer sipper is a prime example of a spicy tequila cocktail done right. Created by Ignacio Jimenez of NYC’s Ghost Donkey, this cooling watermelon cocktail gets a kick from bittersweet Campari and a spicy salt rim (we use Sriracha for a satisfying sweet heat). Throw it into the blender and you’ll have an icy cocktail that’s pool-ready and perfect for day drinking. We recommend serving it alongside a big plate of nachos, just like they do at GD.

Watermelon isn’t just good for its light flavor and eye-popping color. According to Charity Johnston, bar manager at Los Angeles Japanese hot spot ROKU, it also adds a pleasing texture to their signature house punch. “I wanted to create a tropical cocktail that featured a multitude of different flavors, including sweet, tropical and tart,” Johnston says. “Along with guava, pineapple and passionfruit, we juice watermelon, which also adds texture to the drink.” If you’re throwing a house party, backyard barbecue or al fresco dinner party this season, this crowd-pleasing bowlful of fruity booze is begging for a place on the table.

The classic Sherry Cobbler gets an extra boozy summer update in this refresher from Steven Brewer, the beverage director at modern Indian restaurant Babu Ji.
