Even more than most classic cocktails, the Planter’s Punch has evolved and mutated a ton over the decades. At this point, there may be as many versions of it as there are Caribbean beaches to enjoy them on. This version is inspired by the recipe in Jeff Berry’s Potions of the Caribbean. It’s got dark rum, fresh lime juice, ultra-rich demerara syrup, and black tea.
Here’s the complete recipe:
- 2 oz dark rum
- 1 oz fresh lime juice
- .75 oz demerara syrup
- Black tea, to top
- Mint sprig, for garnish
- Fill a Collins glass halfway with crushed ice and pour rum, lime juice, and demerara over top.
- Using a swizzle stick, stir the ingredients to combine and chill.
- Add more crushed ice and top with tea. Stir again briefly.
- Garnish with a mint sprig.
