Bored, hot and restless all summer long, as kids we would wait for the whirling cry of the ice cream truck as it turned onto the street. We’d pool together whatever coins we could unearth from couch cushions and our fathers’ Levis, and make a mad dash to get in line. It was always the same trifecta of treats: the classic ice cream sandwich, the boldly fruity, cake crumb-covered strawberry shortcake pop, and the majestic Choco Taco.
 
While, as grownups, ice cream truck treats don’t offer quite the same satisfaction anymore, they do still ignite some nostalgic cravings. To help awaken your inner summer kid (while satisfying your outer adult), we transformed that holy trinity of ice cream truck staples into cocktails. Instead of running to the ice cream truck this summer, you’ll be running to your liquor cabinet.

You can’t top the cool vanilla and chocolate harmony of an ice cream sandwich—but you can turn it into a cocktail. This liquid take on the summertime staple blends chocolate-flavored vodka with dark rum for a stiff-but-sweet backbone, while frothy egg whites and vanilla extract lend the drink a creaminess akin to melted ice cream. Take one sip of this cocktail and you’ll recall ice cream sandwiches on a hot summer day, dribbling their sticky vanilla sweetness down your hand.

If you were born in the ‘80s, you are already familiar with the majesty that is the Choco Taco. For those unacquainted with what is, quite possibly, the greatest ice cream treat ever created, the Choco Taco consists of a waffle cone taco shell filled with vanilla ice cream and dipped in chocolate fudge and peanuts. The only thing better than the original is this boozy shot-tail made in its honor. A mix of dark rum, chocolate vodka and homemade peanut orgeat, it’s delectably salty, sweet and quaffable. For added effect, serve the shot in a fudge-dipped waffle cone, then eat the booze-soaked cone as a chaser.
