It’s not surprising to find a bright blue tiki drink that’s on the sweet side, but finding one with tequila is a little rarer. Brian Maxwell of Jeepney in New York City designed this tropical libation for his agave-drinking customers, fusing the agave spirit with the fruity, nutty stylings of tiki. He makes it with both tequila and mezcal, along with blue curaçao for color and fruity flavor, citric acid for a bit of bite, cashew orgeat and falernum for buttery texture, and orange and chocolate bitters for depth and pep.

Our house horchata, which combines white and brown rice with cinnamon and agave nectar, makes an easygoing accompaniment to tequila. This complex riff on spiked hot cocoa shows just how sweet a little spice can be.
