If Juice Generation made a Margarita, Beets By J would be that cocktail. Created by barman Josh Goldman at the Santa Monica, California, outpost of butcher shop/restaurant Belcampo, this vibrantly hued cocktail mixes fresh beet juice with citrus-infused agave syrup to create a cocktail that is both healthy and quaffable. Made with añejo tequila, which gives the drink depth and plays off the inherent earthiness in the beet juice, this modern take on a Marg is so good, “it makes you want to dance,” says Goldman.

Ingredients

2 oz Añejo Tequila
1.5 oz Beet and citrus spiked agave
0.5 oz Fresh lime juice
0.5 oz Lemon Juice

Method

  • Add all ingredients to a shaker tin.
  • Add cubed ice and shake.
  • Using a Hawthorne strainer, strain the cocktail into a lowball glass over fresh ice.

Ingredients

500 ml Agave Nectar
250 ml filtered water
zest of 1 lime
zest of 1 lemon
500 ml fresh beet juice
7.5 grams Maldon smoked salt
4 grams ascorbic acid
1 oz Everclear

Method

  • Zest 1 lime and 1 lemon into a bowl.
  • Add the agave nectar and filtered water to the zest, then periodically blend with an immersion blender over the course of 30 minutes to let the oils infuse.
  • Strain out the remaining zest.
  • In a bowl, add 250 ml of the citrus-infused agave syrup (reserve the rest for your next batch of the beet-citrus-agave syrup) along with the beet juice, smoked salt, ascorbic acid and Everclear.
  • Blend with an immersion blender.
  • Store in the refrigerator for up to 2 weeks.
