Despite its easy-to-make, brunch-drink lightheartedness, the Bellini has a surprising origin story. It was actually inspired not by the Mimosa but by the Italian Renaissance painter Giovanni Bellini (see here). Combine it with Rum Punch, which may not have as lofty an origin story but does have a rich history dating to the early 17th century, and you have this delightful Bellini Rum Punch. Both rums fit seamlessly alongside the peach purée, with the Pampero adding vanilla and cocoa notes next to the smooth, medium-bodied spice of the Captain Morgan.

Captain Morgan Spiced Rum
1 oz Captain Morgan Original Spiced Rum
.5 oz Pampero Rum
.5 oz peach purée
- Combine both kinds of rum with peach purée in a Champagne flute.
- Top with sparkling wine.
