We can’t claim to have invented this spritzy concoction—bartenders have been combining the Champagne Cocktail with the Mint Julep for decades—but we can claim to have perfected the proportions. Just the right amount of dry, boozy and refreshing, with just a touch of sweetness, this sparkling Julep is an icy drink that will take you all the way through summer right into the first chill of winter.

mint
1 Sugar Cube
hefty dashes 3-4 bitters
1 oz Bourbon
Champagne, to top
Mint sprig, for garnish

Method

  • In a shaker tin, muddle mint with sugar cube and bitters.
  • Add bourbon and shake with ice.
  • Strain into a lowball glass filled with crushed ice.
  • Top with Champagne and garnish with mint.
