Chocolate-Covered Strawberry Jello Shots

Imagine a perfect, ripe strawberry. Good, right? Now imagine that same strawberry dipped in sweet, creamy chocolate. Even better. Now imagine if that chocolate-covered strawberry contained a boozy chocolate Jello Shot. That’s what we’re talking about. That’s real romance.

These luxe, over-the-top Jello Shots require some time and effort, but it’ll be worth it when you bring them out to a chorus of oohs and aahs. The hardest part is hollowing out the strawberries without damaging their structural integrity, but once you’re over that hump, the rest of the process is fairly foolproof. To make things easier on yourself, try to find the biggest strawberries you possibly can—that way, you’ll also get more jiggly jello and more chocolate. It’s a win-win. Once the strawberries are hollowed, rolled in chocolate and propped up in plastic shot glasses, all you need to do is pour the subtly chocolatey jello mix into the berries, pop them in the fridge and wait. Feel free to serve them as is, or wiggle them out of their molds (make sure to lightly grease the cups ahead of time) and place them on a platter. We like to keep the extra chocolate around the strawberries (who doesn’t want extra chocolate?) but if you would prefer to cut the berries out of the chocolate rounds, feel free. Just promise us you won’t let those extra chocolate bits go to waste.

Ingredients

1 carton Large Strawberries
1 package semi-sweet chocolate chips
1 packet gelatin
.5 cup vodka, chilled
.75 cup Boiling Water

Method

  • Slice tops off the strawberries and scoop out the insides, making sure the fruit is still sturdy.
  • Melt chocolate in a double boiler or microwave.
  • Spoon chocolate into greased plastic shot glasses. This will serve as the base.
  • Roll strawberries in the remaining chocolate so that they are coated.
  • Place berries into the cups, setting them up so they are as vertical as possible.
  • Let chocolate set in the fridge or freezer.
  • Pour chilled vodka and chocolate liqueur into a bowl and sprinkle gelatin on top. Let sit for a minute or two.
  • Add boiling water and whisk to dissolve the gelatin.
  • Pour mix into the strawberries and carefully place back in the fridge.
  • Let set for at least two hours.
  • Serve as is, or remove strawberries from the cups and eat.
