Cucumber Cooler

Cooling aloe syrup gets a soothing helping hand from cucumber juice in this extra-refreshing take on a Gin & Tonic. The syrup is made with pineapple and aloe water (readily available at any health food store or Asian market), which gives the drink a tropical kick. It’s a day on the beach (and the cure for a day on the beach) in one great cocktail.

Ingredients

2 oz gin
.75 oz cucumber juice
.75 oz pineapple syrup
.5 oz lime juice
Tonic water
Lime butterfly

Method

  • Add all ingredients to a shaker except tonic water and garnish.
  • Fill with ice, shake and strain into a highball glass filled with fresh ice.
  • Top with tonic water and garnish with a lime butterfly.

Ingredients

1 500-ml bottle aloe water
1 6-oz can pineapple juice
3 cups cane sugar

Method

  • Add all ingredients to a saucepan and bring to a simmer until sugar is dissolved and fully incorporated.
  • Cool and refrigerate.
