Pink Pamplemousse

Designed specifically to be sipped on the patio at Aureole in New York City, this froth-topped cocktail is the apex of refreshment. Made with a base of rosé, fresh grapefruit juice, strawberry and a topping of cooling cucumber foam, it’s a low-ABV cocktail designed for day drinking bliss. “Nothing says ‘great day’ better than rosé,” says Rob Keller, Aureole’s assistant general manager. “It makes up the volume of the cocktail, so it’s not overly boozy. You can have four of these while you’re relaxing on your porch.” Keller recommends using a dry rosé. “Nothing expensive,” he says. “Cheap rosé is available in abundance. Go for something from Provence or Bordeaux or something from Long Island, like Wolffer Estate.”
 
If you don’t own an iSi to make the cucumber foam, feel free to simply muddle some cucumber into the cocktail or garnish with a sprig or two of herbs like parsley or cilantro.

Ingredients

3 oz rosé
.5 oz Strawberry purée
.5 oz Fresh Grapefruit Juice
.5 oz Cointreau
2 oz Soda Water
strawberry
cucumber foam

Method

  • Combine all ingredients, save for the cucumber foam and whole strawberry, in a mixing glass filled with ice.
  • Roll between another glass to mix ingredients gently.
  • Strain into a Highball glass over fresh ice, top with cucumber foam (if using) and garnish with a whole strawberry.

Ingredients

500 g Cucumber Juice
1 oz Cointreau
7 gelatin sheets

Method

  • Bloom gelatin in cold water.
  • Dissolve gelatin in cucumber juice over a low flame.
  • Combine juice mixture and Cointreau in an iSi and charge twice. Allow 4 minutes to set.
  • Dispense at room temperature.
