This herb-infused syrup combines the fresh flavor of thyme with the raw, earthy sweetness of honey to create an incredible sweetener for classic cocktails. It goes especially well in a Persimmon Bellini.
1 Cup honey
1 Cup water
8 sprigs thyme
- Combine honey, water and thyme in a saucepan and bring to a boil.
- Reduce heat and simmer for about 10 minutes, stirring until honey dissolves.
- Remove from heat and cool.
- Strain out thyme and store syrup in an airtight container.
