Lavender Gin Fizz

This garden-inspired take on a Gin Fizz features the delicate, floral flavors of Earl Grey tea and the heady perfume of lavender bitters. London Dry gin provides the drink with an herbaceous backbone, while a creamy head of egg white foam lightens and brightens. It is the perfect accompaniment to crumpets at your next high tea.

Ingredients

2 oz London Dry Gin
.75 oz Fresh Lemon Juice
0.75 oz Earl Grey Tea Syrup
Egg, whites only
Club Soda, to top
3 dashes Lavender Bitters (plus more for garnish)
Lavender sprig, for garnish

Method

  • Add gin, lemon juice, tea syrup, lavender bitters and egg whites to a shaker tin and dry shake without ice.
  • Break the seal on the tin and add ice. Shake for at least one minute more.
  • Using a Hawthorne strainer, strain into a Collins glass.
  • Add ice, top with soda water, and dash a few drops of the lavender bitters onto the egg white foam.
  • Using a toothpick, swirl the bitters into the foam. Garnish with a lavender sprig.

Ingredients

1 cup White Sugar
1 cup Water
5 Earl Grey Tea Bags

Method

  • Add all ingredients to a saucepan. Bring to a simmer and allow the tea to steep for 5-10 minutes, depending on how strong you want the tea flavor to be.
  • Strain the syrup through a fine sieve into a jar and refrigerate prior to serving. Makes approximately two cups.
