Viewed from one angle, the long, colorful history of the Martini amounts to a continuous erosion of the amount of vermouth in the fabled cocktail. This variation takes that trend to its logical conclusion and skips the vermouth altogether. But it’s much more than just a serving of chilled gin—an all-star trio of garnishes makes sure of that. The sweet-tart accents from the sun-dried tomato and the subtle buttery notes of the Castelvetrano olives, complemented by olive oil, ably take the place of the absent vermouth.
