This mint- and peach-laced gingerade from Julie Rogers of Coltivare in Houston is the holy grail of kid-friendly mocktails. It’s delightfully sweet with the perfect amount of lemon sour. Mint gives the cooler an ultra-refreshing herbal kick, which also happens to pair seamlessly with a little bourbon (if you’re in the mood). If ginger beer proves to be too spicy for the kids, reserve it for the grown-ups and swap in ginger ale.
Handful of mint
1 oz fresh lemon juice
Goya ginger beer
2 oz Peach Syrup
1.5 oz bourbon (optional)
Mint sprig, for garnish
12 oz peach
8 oz water
6 oz sugar
- Add all ingredients to a medium saucepan and bring to a boil.
- Let the mixture simmer until it is reduced to a syrupy consistency.
- Boil for less time if you’d like a fresher and more delicate peach flavor, and boil longer if you’d prefer a stewed peach flavor.
- Add cinnamon, nutmeg, allspice and fresh ginger, to taste. Strain through a mesh strainer and let cool.
