Picante Pomegranate

This Martini is a seasonal customer favorite at The Broadmoor’s onsite French bistro Summit in Colorado Springs— it's always on the menu during the holidays. Like a Christmas cactus in a glass, it’s made with tequila, pomegranate juice, Pama liqueur and lemon juice. The tart, tangy cocktail gets an extra kick from black pepper simple syrup and a Campari-sugar rim. Its bittersweet flavor is such an addicting tongue-teaser, you’ll have trouble stopping at one.

Ingredients

1.5 oz Tequila
.75 oz Black pepper syrup
.5 oz Pomegranate Juice
.5 oz Pomegranate Liqueur
.25 oz Lemon juice
Campari and sugar

Method

  • Rim a coupe glass with Campari and then sugar.
  • Place all remaining ingredients in a cocktail shaker and add ice.
  • Shake and strain into the sugar-rimmed coupe glass.

Ingredients

1 Cup Sugar
1 Cup Water
.5 Cup Whole Black peppercorns

Method

  • Place sugar, water and peppercorns in a small pot and bring to a boil, stirring once or twice.
  • Once sugar has dissolved, remove from heat and let cool.
  • Leave the peppercorns in the syrup to lend it a stronger flavor; strain them out when it is spiced to taste. Chill.
