When you freeze pineapple, something magical happens: The fruit turns into a firm but forgiving sorbet—like an all-natural treat from an ice cream truck. It’s the perfect snack for a sweltering hot summer day. But on it’s own, the pineapple seems to be missing something—alcohol, of course. So we fixed that and turned frozen pineapple into frozen, Margarita-flavored pineapple. All you need is a pineapple, some blanco tequila, agave syrup and fresh lime juice. Mix all the liquids together, place pineapple wedges into the cocktail and pop the whole thing in the freezer. The pineapple slices soak in all the delicious Margarita flavors and then freeze into snackable spiked popsicles.
Speared with popsicle sticks, the icy wedges are delicious summer party snacks—especially when served alongside frozen Watermelon Mojito Pops (because we all like to have popsicle options). For an added kick, sprinkle some Tajín onto the pops. The salty-spicy chile-lime seasoning brings out even more of pineapple’s sweetness and complements the grassy tequila. It’s like a salted rim on a Margarita glass, only way, way better.
