Created by Michael Nemčik, beverage director at Terra Cotta in Los Angeles, this cocktail melds the classic Daiquiri with one of the most popular ingredients of the moment: black sesame. Nemčik was inspired to create the drink after trying goma-ae, a vegetable side dish (usually spinach) topped with sesame dressing, on a recent trip to Japan. Enamored with the nutty seeds, he chose to remake the citrusy rum standby with black sesame syrup in place of the usual simple syrup, giving this cocktail vibrant new life and a dark new color. “The flavors up front are a slight toasted vanilla as well as sweetness from the strong rum,” he says. Which leads into an “intense roasted nut and sesame flavor” on the finish.

Ingredients

1 oz black sesame syrup
2 oz dark rum
.75 oz lime juice
Lime peel, for garnish

Method

  • Combine sesame syrup, rum and lime juice in shaker tin with ice.
  • Shake vigorously and double strain over fresh crushed ice in a rocks glass.
  • Garnish with a lime peel.

.25 Cup black sesame paste
.25 Cup water
.25 Cup sugar

Method

  • In a small saucepan over low heat, stir together the black sesame paste and water.
  • Slowly add sugar, and stir until fully dissolved and silky, approximately 20 minutes total.
