To highlight the apple notes in the Highland Park 12 Year, Jessie Duré of New York’s Chumley’s adds fresh Granny Smith apple juice to the mix, along with a touch of agave syrup to bring out a subtle sweetness and orange bitters. The resulting Scotch & Soda is bright, crisp and dangerously gulpable.

Method

  • Build everything but soda in a highball glass.
  • Top with fresh ice and club soda.

Ingredients

1 Cup water
1 Cup agave nectar

Method

  • Combine the water and agave nectar in a saucepan and bring to a boil.
  • Reduce to a simmer and stir until nectar dissolves, about 2 minutes. Immediately take the saucepan off the heat.
  • Let cool, then pour into a container and store in the refrigerator for up to one month.
