Strawberry oleo saccharum

In a traditional oleo saccharum, citrus peels (usually lemon) are macerated with sugar to release their oils. To make a strawberry-infused version, we added some chopped berries to a lime-based oleo saccharum, for a sweet-and-zesty syrup that’s perfect for mixing into drinks.

2 limes
2 tbsp sugar
Zest from 1 lime


  • Muddle everything together in a bowl.
  • Let sit for at least an hour (the longer, the better), then strain. Makes 3.5 oz.
