12 eggs
1 tsp cream of tartar
2 lbs cane sugar
2 oz Dark Jamaican-style Rum
1 tsp Vanilla Extract


  • In a bowl, beat the egg whites with the cream of tartar until stiff peaks form.
  • In a separate bowl, beat the egg yolks with the sugar, rum and vanilla extract.
  • Slowly fold in the beaten egg whites.
  • Batter can be stored in the refrigerator or frozen and kept for several weeks.
