Made with earthy Batavia Arrack, tart calamansi juice, palm sugar syrup, egg whites and a dash of salt, it is a delightful balance of sour, sweet and creamy that’s fresh enough for a balmy day and comforting enough for a chilly evening.

.75 oz calamansi
.75 oz palm syrup
2 drops saline solution
lime wheel


  • Add all ingredients to a shaker without ice, and dry shake.
  • Fill the shaker with ice and shake again until cocktail is chilled.
  • Strain the drink into a lowball glass.
