Michael Clancy of The National in Athens, GA created this low ABV take on a Pimm’s Cup that marries the bitter, citrusy flavors of IPA with Giffard’s banana liqueur and Pimm’s No. 1. Spritzy and summery, you’ll want to sip this cocktail all day long—and, thanks to its relatively low-proof nature, you can! While Clancy uses Creature Comforts Tropicália in his syrup (it’s made across the street from The National), you can opt for any citrus-forward IPA.
Tropicália Pimm's Cooler
12 oz IPA
1 Cup Sugar
- Combine IPA and sugar in a saucepan over low heat.
- Reduce by about one-quarter.
- Let cool and use in the Tropicália Pimm's Cooler.
