Known for its fresh approach to tiki cocktails, Brooklyn’s Fort Defiance doesn’t disappoint with its Gin and Tonic twist. In true tiki fashion, the cocktail employs pineapple, cardamom and lime to channel the tropics, and add lovely balanced depth to a base of navy strength gin and a tonic topper.

Ingredients

2 oz navy strength gin
1 oz fresh pineapple juice
.75 oz lime juice
.75 oz simple syrup
3 cardamom pods
tonic
2 to 3 Pineapple leaves

Method

  • Place cardamom pods in a shaker and crack with a muddler.
  • Add remaining ingredients, except tonic and garnish, to the shaker and fill with ice.
  • Shake, and fine strain into a tall tiki mug over fresh ice.
  • Top with tonic.
  • Stir gently and garnish with pineapple leaves.

Ingredients

1 Cup White sugar
1 Cup Water

Method

  • Combine the water and sugar in a saucepan and bring to a boil.
  • Reduce to a simmer and stir until sugar dissolves, then immediately take the saucepan off the heat. 
  • Let cool, then pour into a container (a Mason jar works nicely) and store in the refrigerator for up to one month.
