White Cloud Recipe

Nigori, a milky white sake with a name that roughly translates to cloudy, is an unfiltered style that can be a versatile base in fuller bodied sake cocktails. The bar team at ROKU, a Japanese restaurant on Sunset Strip in West Hollywood, uses nigori for its White Cloud cocktail, playing off of the coconut and orange blossom flavors in Rock Cloud Nigori to create a drink that’s essentially a light sake take on a Piña Colada. The coconut puree makes it full enough to drink in the wintertime, but the drink is light enough to be a nice summertime sipper.

Ingredients

1 oz Coconut Puree
1 oz Absolut Elyx
1 oz Rock Cloud sake
.75 oz Dolin Blanc Vermouth
.5 oz Yuzu
.5 oz Aperol

Method

  • Add coconut puree, vodka, sake, vermouth and yuzu into a shaker.
  • Shake.
  • Strain into a Colins glass over ice.
  • Float Aperol and garnish with a Blood Orange wheel.
